Today marks a day of love for many in Australia as it is Valantine’s Day. Throughout the country couples are celebrating their love for one another, while others are chasing the idea of a new beginning. So on this day of bold moves and loving gestures it seems only right to introduce to you Immerse Yarra Valley.
The beginning of a love story:
Ours was a tale heard many times before; friends become house mates and love blossoms. We had only just discovered our love when we found ourselves wandering the rose lined paths of the English style garden at Immerse, all those years ago. To be invited back to the property this time with children and 7 years marriage under our belts was nostalgic.
It seems that the romance at Immerse has only blossomed since my last visit. The pitched roof of the chapel rising out of the vines is the first thing you see as you pull into the drive way, suggesting that this is an establishment dedicated to strengthening the journey. As you wander the gardens with the scent of rose and lavender accompanying you, remember that this property defines the term New Beginnings. You see, half of the land fell victim to the devastating fires of Black Saturday eight years ago. So, rising from the ashes and overcoming devastation is now the foundation of this welcoming and romantic destination. The addition of an outdoor chapel and onsite accommodation ensures that Immerse ticks all the boxes for weddings, conferences and celebrations.
Wine and Dine:
Walking past the rustic bicycle, delivering the tantalising house baked sourdough, you will notice the tasting bar. This is where you can sit and discuss with the staff the complex flavours of the Immerse wines. The sparkling Shiraz is one to try and is the perfect alternative for those who find a Moscato too sweet. And what a perfect way to find the perfect wine to order with your lunch than to taste the entire range!
Order from the Asian infused menu and enjoy the ambiance of the bustling restaurant. If you prefer a more intimate setting and the sun is shining, the shade of the liquid amber offers the perfect environment to enjoy the garden, menu and each other. With the addition of a new brewing company, the beer garden offers plenty of share tables for a Sunday session to remember.
Warning: for those pork belly lovers out there, the Immerse version is a non-crackle dish. The flavour is amazing and the meat tender and juicy… however I know there are a few die hard crackle fans that would be disappointed if they didn’t have this information before ordering. So now you have been told.
Over the last 9 years Immerse has seen its ups and downs. It has survived the unimaginable and has risen from the ashes to become a property full of love and commitment. A property that plays part in celebrating life and family. As with my love story the tale of Immerse will continue with a strength and commitment that will ensure its future is a bright one.
Such a lovely story with beautiful scenery to boot. Your photos are fantastic! I looks like I can reach in and take a bit of the food.

Thank you so much. It is actually coming up to 8 now…I lost count hhahhaha! It was quite nostalgic returning to the property and enjoying it with my hubby. Although we were a little more stressed out this time – with the kids running around. Gone are the days.

It was a great return visit. The kids did have a great time running around… hence probably not the most relaxing return for my husband and i. The food was delicious and the service was great – I highly recommend a visit if you are in the region.
